Her name's sort of a reference to Voodoo/Vodun.
Baron Samedi is the loa (posessing spirit/deity) of the dead in the religion. He's usually depicted as an old-fashioned undertaker, with a top hat and sunglasses.
Papa Legba is the loa who serves as the intermediary between the mortal and the spiritual; he's the first god invoked in any Voodoo ceremony. He's shown as an old man with a crutch.
Naming a villain "Mama Samedi" is my lame-ass way of categorizing her as a kind of gateway by which the dead can return to the land of the living. She has zombie-summoning powers, see?
When she gets high-enough level to start naming her summoned creatures, I'm gonna name all of them after loas, too.
